To eat at Maria Pia's celebrated
trattoria in Wellington is to
partake in a totally joyful eating
experience. Maria Pia creates authentic
Italian food, steeped in tradition, cooked
and served with stylish exuberance. It is
not surprising to know that she has been
recognised by the Italian Government
as one of the great Italian restaurateurs
of the world.
Drawing on the regional food of Puglia
in Southern Italy, where sha grew up,
as well as Emilia-Romagna and Tuscany,
Maria, Pia's recipes are imbued with
flavours born of an uncompromising
respect for the food culture of Italy and
the use of the highest quality ingredients.
Beautifully photographed by Sal Criscillo,
Mangiare Italiano abounds with passion
and integrity.
Maria Pia de Razza was brought up in Lecce,
Puglia and learned to cook from her grandmother,
her mother and household servants. She studied
macrobiotics in Florence, cooked at a Steiner
school and taught cooking in Emilia-Romagna.
After immigrating to New Zealand she opened
a delicatessen in Wellington and co-founded the
local chapter of the International Slow Food
Movement. Maria Pia and her husband Richard
Klein live in Wellington and have two daughters.
Their trattoria has received rave reviews from
food critics since it opened in September 2002.
Sal Criscillo's forebears migrated to New Zealand
from the volcanic island of Stromboli, off the
Italian mainland. Sal is one of New Zealand's
most experienced freelance photographers and
has been photographing advertising and illustrative
assignments, nationally and internationally, for
the past 35 years. His work spans a wide variety
of subjects from food to fashion; from people to
landscapes. He lives in Island Bay, Wellington.
